Ingredients for 2-4 servings
4 eggs
240 g spelt flour
30 g sugar
1 pinch salt
0.5 tsp. baking powder
300 ml milk
plum compote
organic sheep milk yoghurt


Beat the eggs and separate the whites from the yolks.


Put the flour, sugar, salt, baking powder, egg yolks and milk in a mixing bowl and mix to a thick dough.


Put the egg whites in a separate bowl and beat until stiff. Then gently fold into the dough.


Place the butter in a pan, melt and swirl to distribute evenly. Slowly pour in the thick dough. Reduce the heat and fry slowly on both sides.


Break the pancake into irregular pieces with the help of two forks. Before serving, garnish the Kaiserschmarren with raisins and dust with powdered sugar.


Then serve it warm with plum compote, apple sauce and some organic sheep's milk yogurt.
